Ingredients:
- All purpose flour 150 gms
- Whole wheat flour 150 gms
- Oats 50 gm
- Salt to taste
- Honey 1 tbsp
- Olive oil 2 tbsp
- Water as required
- Instant yeast 1 tsp
Method:
- Cook the oats in water like how we make the usual oats porridge.
- Allow it to come to room temperature. Mix the flours, salt and instant yeast in a big mixing bowl.
- Add the cooked oats and honey and knead it. Drizzle the oil and use water as required and knead into a soft and smooth dough. This will take around 10-12 minutes.
- Oil a big bowl and place the dough in it. Cover the bowl with a cling wrap or a moist towel.
- Allow the dough to double in size.
- Once the dough is doubled, punch out the gases and knead again for a minute or two.
- Divide the dough into 4 parts. Roll them into balls and allow it to rest for 10 minutes.
- Now take each ball and roll it to a rectangle.
- Fold it into a small loaf of around 9 inches long and 3 inches wide.
- Place it on a baking tray lined with parchment paper.
- Repeat with the other 3 balls.
- Spray some water on top and cover the tray with a big lid of place the tray in a big plastic cover and allow it to proof again till it almost doubles.
- Preheat the oven at 180 degree Celsius for atleast 10 minutes.
- Bake these club sandwich loaf for 20-25 minutes or till the top has a nice golden colour.
- Remove from oven and brush the crust with little butter.
- Transfer them onto a wire rack and cover it with a soft moist towel and cool well.
- Your healthy chemical free club sandwich loaf is ready.
- Make sandwiches of your choice and serve hot.
Notes:
- I made a simple filling of paneer, onions, tomatoes n bell peppers and filled the bread with it along with some Chipotle sauce and cheese slices.
- If you are an eggetarian, you may add an egg yolk to the flour while kneading. This will help you to get very soft breads and you can use the egg whites to wash the bread before baking.
