Strawberry Cake
How about a simple eggless strawberry cake?
Ingredients:
- All purpose flour 125 gm (1 cup)
- Strawberry custard powder 2 tbsp
- Salt a pinch
- Baking powder 1/2 tsp
- Baking soda 1/4 tsp
- Powdered sugar 80-100 gm
- Butter 50 gm
- Strawberry puree reduced 2 tbsp
- Chopped strawberries 6-8 small
- Milk 1/2 cup plus 2 tbsp
- Vanilla/strawberry extract 1/2 tsp
- Pink food colour optional (few drops)
Method:
- Preheat the oven at 150 degree Celsius for 10 minutes.
- Grease a six inch round cake tin and dust it with flour.
- Sieve together the flour, custard powder, salt and the rising agents 3-4 times.
- Beat the butter and powdered sugar till it is creamy.
- Add the strawberry puree and milk and blend well.
- Now add the extract and miw.
- Add the chopped strawberry pieces into the dry ingredients and mix well.
- Now fold the dry ingredients into the liquid mixture using a spatula. Do not over mix.
- Pour the mixture into the prepared cake tin and tap it on the counter 2-3 times to remove the air bubbles.
- Bake in the preheated oven for 35-38 minutes or till a toothpick inserted into the centre comes out clean.
- Remove the tin from the oven and allow it to cool in the pan for 6-7 minutes.
- Transfer the cake from the pan into a wire rack and cool well.
- Cut it neatly and serve 🙂
