Apple muffins
Neha’s exams had just got over and she had invited home few of her school friends and apartment friends. Their lunch menu was soya alu tikki burger, baked potato smilies and whole wheat pizza cups. After lunch, the girls were enjoying a movie together and hence decided to give them some sort of healthy cupcakes to munch. This was my first trial with apple muffins and I should that say that it wasn’t all that bad. It had a mild apple flavour which was enhanced with the cinnamon powder flavour, after all apple and cinnamon is a match made in heaven, isn’t it? This being my first trial and it was for Neha’s friends, I decided to play a bit safe and hence used a combination of all purpose flour and whole wheat flour. I have used a 240 ml cup.
Ingredients:
- All purpose flour 90 gm
- Whole wheat flour 90 gm
- Salt a pinch
- Brown sugar 1/3 cup plus 1 tbsp
- Oil 1/4 cup
- Butter 1 tbsp
- Milk 1 cup
- Vinegar 2 tsp
- Baking powder 1 tsp
- Baking soda 1/2 tsp
- Grated apples 2
- Vanilla extract 1/2 tsp
- Cinnamon powder 1 tsp
Method:
- Preheat the oven at 160-170 degree Celsius for atleast 10 minutes.
- Grease a cupcake/muffin mould with butter or line them with parchment paper.
- Sieve the flours, salt, rising agents and cardamom powder 7-8 times.
- Mix the oil, butter and sugar in a mixing bowl till the sugar almost dissolves.
- Add vinegar to the milk and mix well.
- Now add this to the sugar mixture and mix well. Add the vanilla extract.
- Now grate the apple and keep aside.
- Slowly fold in the dry ingredients into the liquid mixture.
- Add the grated apple and fold gently. Do not over mix.
- Pour the mixture into the prepared muffin mould till 2/3 rd of its capacity.
- Bake for 30-35 minutes or till a toothpick inserted into the centre comes out clean.
- Remove the mould from the oven and allow it to cool for 4-5 minutes.
- Transfer onto a wire rack and cool.
- Enjoy these warm with a drizzle of maple syrup or dust it with icing sugar.
