Whole wheat triple chocolate cookies
Though I use healthy flours in most of my bakes, but I was not fully convinced to use full wheat flour in my chocolate cookies. But this triple chocolate cookies surprised me with its taste and crunchy texture. These are perfect crunchy and chocolatey with burst of chocolate in each bite. Ingredients:
- Whole wheat flour 100 gm
- Cocoa powder 25 gm
- Salt a pinch
- Brown sugar 75 gm
- Chocolate 100 gm
- Chocochips handful
- Butter 56 gm (1/4 cup)
- Vanilla extract 1/2 tsp
- Milk 1-2 tsp (optional)
Method:
- Cream the butter and the brown sugar till its soft and fluffy and light in colour. Add the vanilla extract.
- Sieve the wheat flour, cocoa powder and salt together.
- Chop the chocolate pieces and add them into the dry ingredients.
- Add the dry ingredients into the butter-sugar mixture and mix. Add little milk if the dough appears very dry.
- Keep the dough inthe regrigerator for an hour or so if its too sticky.
- After an hour, preheat the oven at 170-180 degree Celsius for atleast 10 minutes.
- Line a baking tray with parchment paper and keep it ready.
- Scoop out a tablespoon of the dough and shape into disks. Decorate woth chocochips.
- Arrange them neatly on the baking tray leaving some gap between two consecutive cookies to allow it to spread.
- Bake for 22-25 minutes or till it looks done.
- Remove from oven and allow it to remain in the tray for few more minutes.
- Transfer onto a cooling rack and cool it well.
- Store in airtight containers. Enjoy with a cup of milk.
Can we replace brown sugar with jaggery powder? Should we increase the quantity?
Yes you can. Depends on how sweet you want and how sweet your jaggery is.

Tried this recipe today.
Tasted superb, but the only thing is that the cookies are a bit chewy and soggy at the centre… more like Brookies.
Should I bake them for a longer time period ?
Or at a higher temperature ?
