Wheat cashew pista badam cookies
I was going to meet my sister and family and it was another chance for me to experiment with different flours and flavours. I wanted to gift some to my sister’s sister in law (who is expecting her first baby) and another cousin of mine. So made a variety of cookies in the last two days. Do check my earlier post on Pista cookies.
Ingredients:
- Whole whear flour 100 gm
- Milk powder 25 gm
- Salt a pinch
- Baking powder 1/4 tsp
- Baking soda a pinch
- Brown sugar 75 gm
- Butter 80 gm
- Vanilla extract 1/2 tsp
- Milk 1-2 tsp (if required)
- Chopped pista 1-2 tbsp
- Chopped roasted cashew 1-2 tbsp
- Chopped badam 1-2 tbsp
Method:
- Cream the butter and sugar till its soft and fluffy. Add the vanilla extract and mix.
- Sieve the flour, milk powder, rising agents and salt together.
- Add the dry ingredients into the butter-sugar mixture and mix. Add the chopped dry fruits reserved some to be sprinkled on top after shaping the cookies.
- Add little milk or butter if the dough appears too dry. Do not knead hard.
- Keep the dough inthe regrigerator for an hour or so. The mixture will be sticky.
- After an hour, preheat the oven at 160-170 degree Celsius for atleast 10 minutes.
- Line a baking tray with parchment paper and keep it ready.
- Make small balls if the dough and flatten it in your palm. Cut into desired shape using a cookie cutter.
- Arrange them neatly on the baking tray leaving some gap between two consecutive cookies to allow them to spread while baking.
- Sprinkle the finely chopped nuts on top.
- Bake for 20-25 minutes or till it looks done and the sides look golden.
- Remove from oven and allow it to remain in the tray for few more minutes.
- Transfer onto a cooling rack and cool it well.
- Store in airtight containers. Enjoy.
Notes:
- Each oven behaves differently. So check it after 20 minutes.
- Adjust the sugar as per your taste. I prefer my cookies mildly sweet.
- Vanilla essence can be replaced by cardamom powder or butter essence or almond essence.
- Once you taste these, I am sure you will not have any hesitation in making cookies with whole wheat flour.
- Do not forget to smell these cookies, they smell heavenly 🙂

Can I replace butter with homemade ghee. If so, same qty as butter?
Also, can I use either powdered jaggery or regular sugar by powdering it in mixie instead of brown sugar?
Try using ghee. Texture might differ a bit. Yes u can use powdered sugar or jaggery too. Thanks
