How to make dessicated coconut

The last time when I tried to make coconut macaroons with home made aqua faba, though the texture came out well, I was not very happy with the taste of the store bought dessicated coconut. That moment I decided never to buy dessicated coconut from shops any more. Its very simple to make these at home and really cost effective too. The other day I had got a small coconut as prasadam from our building temple and we were about to leave for a week’s trip the next day. So I had to finish off the coconut somehow. This was the perfect time for me to bake this dessicated coconut 🙂 All you need is a fresh coconut and an oven 🙂 I got around 60 GM’s dessicated coconut using half of a small coconut, isn’t it cheap and nice?
Ingredients:
- Shredded coconut 1 cup (1/2 coconut)
Method:
- Preheat the oven at 100 degree Celsius for 10 minutes.
- Line a baking tray with parchment paper.
- Spread the shredded coconut on the baking tray evenly.
- Bake it for 15-20 minutes or till it looks completely dried.
- Take care not to change the colour much.
- Remove from oven and cool well.
- Store in airtight containers.
- You can refrigerate it for a longer shelf life.
- Use it in cake, cookies or any desserts.
