Eggless Vanilla Cake
Every baking blog should have a basic eggless vanilla cake, isn’t it? So here is a simple one which gets ready in 30-35 minutes. I made this with very less sugar to make a Dulce de Leche dessert. I have used only 50 gms of sugar. You can use 100 gms sugar. Use a good quality vanilla extract for a better flavoured cake. Use 60 ml of melted butter if you are not planning to frost it and have it like a tea cake. Feel free to add nuts or choco chips or dehydrated fruits or even the humble tootifrooti 🙂 I have used a 240 ml cup.
Ingredients:
- All purpose flour 125 gm (1 cup)
- Salt a pinch
- Sugar 100 gm (1/2 cup)
- Baking soda 1/2 tsp
- Vanilla extract 1/2 tsp
- Oil 60 ml (1/4 cup)
- Milk 120 ml (1/2 cup)
- Apple cider vinegar 1 tsp
Method:
- Preheat the oven at 160 degree Celsius for 10 minutes.
- Grease a six inch round cake tin and dust it with flour very well. Tap the excess flour.
- Sieve the flour, salt and baking soda 2-3 times.
- In a measuring jar, mix the oil, milk and sugar very well. Add the vinegar and mix. Now add the vanilla extract and mix it well.
- Now add the liquid ingredients into the dry flour mixture and fold gently using a balloon whisk or spatula. Do not over mix.
- Now pour the batter into the prepared cake tin and tap 2-3 times on the counter to remove any trapped air bubbles.
- Bake for 25-28 minutes or till a toothpick inserted into the center comes out clean.
- Remove the tin from the oven and allow it to cool in the tin for 4-5 minutes.
- Transfer onto a cooking rack and cool well.
- Serve it frosted with your desired frosting.
- You can use this as a base for any eggless cake.
- I used the cake to make a Dulce de Leche dessert.

Hello mam.. What does don’t over mix mean. How can we even know whether we are over mixing or not? I am beginner and all my previous attempts to bake a cake has flopped miserably. Kindly help
That u will get with practice n experience. Basically just fold wet n dry ingredients. Do not mix or stir vigorously. Be gentle. The mixing shloud get over in less than a minute if it helps
Is baking powder not used in the recipe…n also does baking soda change the colour of the cake??
