Sourdough Discard Pancakes
It hurts me a lot when I have to waste some food item. So, the main cause of concern in making a starter for sourdough bread was the discard. After searching the internet, I got many ideas to use this flour and water mixture. One such was the whole wheat and sourdough discard crackers. Another one is the below described pancakes. Just use your imagination and play around with various fruits and purees and compotes and create a riot in your kitchen. I am sure, your kids will love these soft and fluffy pancakes without any added rising agents and with the goodness of natural yeast.
Ingredients:
- Sourdough discard 200 gm
- Salt a pinch
- Sugar 1 tbsp
- Milk as required
- Vanilla extract few drops
Method:
- Mix all the ingredients in a big mixing bowl and whisk it well till you get a smooth batter.
- Allow it to rest for 10-15 minutes.
- Heat a heavy non stick pan or iron girdle.
- Pour a big spoon of the dough and close with a lid.
- Flip and cook on the other side too.
- You can sprinkle some butter or ghee or top or completely avoid it to make it oil free.
- Repeat with the remaining batter.
- You can dust these pancakes with some icing sugar.
- Serve these pancakes with maple syrup or fruit jam or some orange marmalade maybe with a dollop of fresh cream.
Notes:
- You can add a beaten egg to the batter for a fluffier texture.
- Optionally, you can add mashed bananas to make banana sourdough pancakes or grated apples to make an apple sourdough pancake.
- You can apply chocolate ganache to the prepared pancakes or add some cocoa powder to the batter along with a tablespoon of sugar and make chocolate sourdough pancakes 🙂
- Just play around with fresh fruits and make flavourful pancakes.
- So now onwards, no more throwing away of those discards. Use it to make pancakes or crackers.
