Sweet Roses n Savoury Cups
I was thinking of what to name these fruity rose like shaped sweet buns and the savoury cups 🙂 These are extremely simple and versatile breads which is surely going to make your little ones happy. To make it very very soft and spongy, you can opt for full all purpose flour. But I have used a combination of all purpose flour and whole wheat flour to make a healthier version. You can get creative and use various filling to stuff these. I have used some freshly made blueberry compote, cherry compote and strawberry compote. You can use cooked apples with cinnamon and sugar or any other fruit or berry compote. For the savoury ones, I have used some freshly chopped coriander leaves and cheddar cheese. These can be made without the filling too. Perfect for an evening snack along with a cup of hot tea/coffee.
Ingredients:
For the dough:
- All purpose flour 75 gm
- Whole wheat flour 75 gm
- Salt as required
- Sugar 2 tsp
- Instant yeast 1/4 tsp
- Butter 1 tbsp
- Milk plus water as required
For the sweet filling:
- Blueberries few
- Cherries few
- Strawberries few
- Sugar 3-4 tsp or as required
For the savoury filling:
- Coriander leaves handful
- Garlic powder 1-2 tsp
- Onion powder 1-2 tsp
- Chilli flakes as reqd
- Cheddar cheese 2 tbsp
Method:
To make the dough:
- Mix the flour, salt, sugar, yeast and knead into a soft dough using the milk and water.
- Add butter while kneading.
- Place the dough in a well oiled bowl and keep it covered till it is double in size.
- Once doubled, punch out the gases and knead for a minute or two.
To make the filling:
- Cook the blueberries with a spoon or two of sugar till it resembles a jam like consistency. Do not overcook.
- Repeat with the cherries and strawberries too.
- Mix the coriander leaves, chilli flakes, onion powder and garlic powder.
- Grate the cheese and keep it ready.
Assembly:
- Make 12 small balls from a portion of the risen dough.
- Roll it into small puris which is approximately 3 inches in diameter.
- Keep four puris as shown in the picture below.
- Apply the compote and roll carefully as shown below.
- Take a sharp knife and cut at the centre.
- Place these two roses with the open side facing up in a cup cake mould.
- Repeat another set of 4 puris and apply the other compotes too.
- So in all you will get 6 cups, two of each flavour.
- Cover lightly and let it puff for 20 minutes or so.
- Now for the savoury ones, roll the remaining dough into a big slightly thick rectangle.
- Sprinkle the coriander leaves mixture and spread the grated cheese on top.
- Roll it into a long log and cut out 18 pinwheels from it.
- Keep 3 pinwheels in a cupcake mould and make 6 such cups. Allow this to rise till it puffs up a bit.
- Meanwhile preheat the oven at 180 degree celsius for atleast 10 minutes.
- Bake these 12 cups for 20-25 minutes or till the top looks golden.
- Remove from the oven and apply butter on top.
- Cool it a bit and enjoy 🙂
