Gulab Jamun Mix Cake
Chennai weather has been very pleasant since past two days and schools have been given holidays fearing some heavy rains. So, my Neha is at home and the weather is too good to bake and try new stuffs. I am a bit hesitant to make bread dough, fearing some power failure. Cakes are a safer option because I know to bake it in a pressure cooker or kadhai even if the power goes off.
Last year I had baked a similar cake with store bought gulab jamun mix and whole wheat flour. But now I think my cake baking skills have improved 🙂 So here is a simple eggless tea cake flavoured with cardamom powder and saffron strands. I have made it very mildly sweet. You can increase the amount of sugar if you like. I have used a 240 ml cup.
Ingredients:
- Whole wheat flour 75 gm
- Gulab jamun mix 75 gm
- Baking soda 1/4 tsp
- Curd 1/4 cup
- Milk 3/4 cup
- Ghee 1/4 cup
- Cardamom powder 1/2 tsp
- Saffron strands few
- Brown sugar 1/2-3/4 cup
- Almonds for garnish
Method:
- Preheat the oven at 150-160 degree celsius for atleast 10 minutes.
- Grease a 6 inch round cake tin with butter and dust it with flour.
- Sieve the whole wheat flour, gulab jamun mix and baking soda for 10-15 times.
- Mix the ghee, milk, curd, sugar, cardamom powder and saffron till the sugar is fully dissolved.
- Add the liquid mixture to the dry ingredients and fold gently.
- Pour the batter into the prepared cake tin and tap it to remove the air bubbles.
- Garnish with almond slices.
- Bake in the preheated oven for 40-45 minutes or till a toothpick inserted in the centre comes out clean.
- Remove from the oven and allow it to cool in the tin for 3-4 minutes.
- Transfer onto a cooling rack and cool well.
- Slice and serve it with tea or coffee.
Notes:
- I have used only 1/2 cup sugar and its really too less You can add 1-2 table spoon more for mild sweetness. If you really have a sweet tooth, add 3/4 cup of brown sugar.
- The curd should be fresh and not very sour.
- The softness depends a lot of sieving the flour really well. No short cuts here please.

I would like to know if for the above gulab jamun cake recipe, can I substitute oil with ghee? And can I sandwich and frost this cake with whipped cream and jamoons?

Thank you..I have used ghee and not oil. You can use oil if you want. Yes you can fill n frost it with cream n jaamun
