Badam Kesar Wheat cupcakes
Every year during Diwali, I try to make some sweets and savouries and distribute it to our neighbours and friends. But this time owing to severe heel pain, I didn’t make a single thing. I was really feeling guilty and was itching to make atleast one sweet for Diwali. What better than these healthy whole wheat mini cupcakes flavoured with cardamom, saffron and almonds. This will go perfectly well with a whipped cream frosting flavoured with Kesar and cardamom. The soft and airy crumbs are too good to be true. At times I love cupcakes without the liners. Just look at the bottom of these cupcakes, isn’t the brown colour too appealing? Please do try and share your experiences. Btw, I have used Canadian organic whole wheat flour which is full of bran and very coarse unlike the fine whole wheat flour that we generally get here.
I have used a 240 ml cup
Ingredients:
- Whole wheat flour 100 gm
- MTR badam milk powder 3 tbsp
- Baking soda 1/2 tsp
- Salt a pinch
- Brown sugar 1/4 cup
- Milk 1/2 cup plus 1-2 tbsp
- Cardamom powder 1/2 tsp
- Saffron strands few
- Apple Cider vinegar 1 tsp
- Oil 3 tbsp
- Chopped almond pieces 2 tbsp
Method:
- Preheat the oven at 160 degree celsius for atleast 10 minutes.
- Grease a mini cupcake mould with some butter.
- Sieve flour, salt, baking soda, cardamom powder and MTR badam milk powder few times.
- Mix milk, oil and sugar in a bowl till the sugar is fully dissolved in it. Add the vinegar and saffron strands to it and mix well.
- Add the liquid ingredients into the dry ingredients and stir gently.
- Fold in the chopped almond pieces into the mixture.
- Pour the mixture into the cupcake mould taking care not to fill it more than 3/4 th of its capacity.
- Bake for 18-20 minutes or till a toothpick inserted into the centre of the cupcake comes out clean.
- Take the mould out of the oven and cool for 3-5 minutes.
- Transfer onto a wire rack and cool.
- Serve it warm as it is or frost it with cream and enjoy 🙂
Notes:
- These are very mildly sweet cupcakes. You can increase the amount of sugar if you please.
Man can u plz tell me any substitute for apple cider vinegar
Use Normal vinegar or lime juice
