Whole Wheat Biscotti
Ingredients:
- Whole wheat flour 125 gm
- Salt a pinch
- Baking powder 1/4 tsp
- Baking soda 1/4 tsp
- Brown sugar 1/4 cup plus 1 tbsp
- Canola oil 1/4 cup
- Vanilla extract 1 TSp
- Almonds 10-12
- Dates 5-6
- Raisins a handful
- Milk 1-2 tbsp (optional)
Method:
- Mix the oil and the sugar nicely in a big bowl. Add vanilla extract to it.
- Mix the flour, salt and the rising agents.
- Chop the almonds, dates and raisins into small bite size pieces.
- Add the dry ingredients and the nuts into the oil-sugar mixture and make a dough. Add little milk if necessary.
- Take a baking tray and line it with parchment paper.
- Make a log of approximately 10 inches length and 3 inches width from the dough and place it on the tray.
- Meanwhile preheat your oven at around 180 degree celsius for atleast 10-12 minutes.
- Bake the shaped dough for atleast 25-30 minutes or till it looks cooked.
- Take it out of the oven and allow it to cool in the tray for few minutes.
- Spritz little water over it and cut it into neat oblong shapes of say 1/2 inch thickness.
- Arrange these on a baking sheet again and bake each side for around 10-12 minutes each at say 150 degree celsius.
- Remove from oven and allow it to cool really well.
- Healthy biscottis are ready to be dunked in milk/tea/coffee 🙂
Notes:
- If you prefer more sweet, ypu can increase the sweetness by 1-2 tablespoon.
- The oil can be substituted with 1/4 cup butter at room temperature.
- You can use orange extract and any other dried berries or nuts of your choice.
