Choco Filled Butter Cookies
I don’t have time to write an introduction to this post and many of my friends were waiting for the recipe. So quickly uploading the post. I had made this for my parents and sister along with some other varieties.
Ingredients:
- All purpose flour 110 gm
- Corn flour 2 tbsp
- Salt a pinch
- Baking soda a pinch
- Baking powder a pinch
- Powered sugar 70-75 gm
- Butter 75 gm
- Vanilla extract 1/2 tsp
- Chocolate ganache as required
Method:
- Preheat the oven at 160 degree Celsius for ten minutes.
- Sieve the all purpose flour, cornflour, rising agents and salt till everything is combined well.
- Cream butter and sugar till it is soft and creamy.
- Add the dry flour mixture to the butter sugar mixture and combine well. Do not knead hard.
- You can refrigerate the dough if it appears too soft.
- Line a baking tray with parchment paper and keep it ready.
- Take a small ball of the dough and flatten it in your palm. Keep a small lump of the chocolate ganache in the flattened dough and seal it well.
- Place these balls on the tray at a distance of around 1 inch from each other.
- Bake the cookies for 15-18 minutes or till they appear done.
- Remove from oven and let it remain in the tray for 3-4 minutes.
- Transfer on a cooling rack and allow them to cool well.
- Store in airtight containers.
Notes:
- For the ganache, heat 100 gm of fresh cream till bubbles appear on sides and pour it over 200 gm of choco chips. Wait for 3-4 minutes and stir well till you get a smooth homogeneous mixture. Cool well. Chocolate ganache is ready to use.
- For an oozing chocolate feeling, just microwave these cookies for few seconds before serving. You can enjoy rich dark chocolate oozing out of buttery brownie kind of cookie just like the advertisement they show on television.
