Egg Stew
Another stew in my blog. A very simple recipe and hardly take few minutes to cook it up. Serve it with idli, dosa, idiyappam or aappam. If you have ready made coconut milk in your pantry, then its all the more easy to make this. Please do try.
Ingredients:
- Potato 2
- Onion 1
- Green chilies 2-3
- Ginger 1 inch piece
- Garlic cloves 2-3
- Boiled eggs 2-3
- Salt to taste
- Turmeric powder 1/2 tsp
- Pepper powder 1 tsp
- Curry leaves 2 sprigs
- Coconut milk 2 tsp
- Coconut milk 1/2 cup
Method:
- Peel and cut the potato into cubes
- Slice the onion and green chillies.
- Cook the potato and onion along with salt, turmeric powder, garlic and ginger till it is soft.
- Peel the eggs and make slits on it. Now add it to the cooked potato.
- Add the coconut milk and pepper powder and bring to a boil.
- Sprinkle coconut oil and curry leaves.
- Serve it hot with aappam or idiyappam or idli/dosa or freshly baked rolls or buns or bread 🙂
