Paalada
Paalada is one of the most famous and talked about payasam in Kerala. It’s served in most lavish marriages and sadya.
Ingredients:
- Paalada packet 1
- Sugar 400-500 gm
- Cardamom powder 1 tsp
- Cashew nuts a handful
- Kismis a handful
- Full cream milk 3-4 litres
Method:
You can buy ready made palada packets from the supermarket. They are easily available in many brands.
- Open a packet and wash the Ada well.
- Boil 3-4 litres of full cream milk alin a heavy bottom big vessel and add the washed Ada into it.
- Cook till the Ada is soft and tender.
- Add the sugar and keep on stirring till the milk reduces and the payasam becomes pinkish in colour. It will take an hour or so
- Remove from heat.
- Now heat ghee in a small frying pan and fry the cashews and kismis separately.
- Add these and cardamom powder to the payasam
- Alternatively, you can skip the cashews and kismis and add a nice dollop offresh unsalted butter to the payasam.
- Serve it hot or chilled as per your liking.
