Home made Muesli
Hubby is strongly addicted to jogging these days. Daily he goes on 10 plus km jog and I constantly worry whether he is getting enough nutrition and proteins. Long back I had tried to make some granola bars for him. Yesterday he casually mentioned that why don’t you make some Granola bars for me? So here I am… trying to make a baked version of super healthy Granola bars. But when I baked it, I realised that I would require more honey or some melted jaggery or more cocoa powder to be able to bind it and get the entire dry ingredients get moist. But since I didn’t want a sweeter version, I refrained from adding any more sweetner. Hence I ended up getting crispy muesli and it was nowhere close to granola bars 🙂 But it’s quite yummy and very very healthy and filling too, much better than store bought muesli.
Just pick whatever nuts, dry fruits, cereals, oats, puffed grains, honey, cocoa powder, cinnamon powder, little butter you have at home… roast them… crush them and bake for a few minutes and voila…. Your healthy muesli is ready. Just be creative.. let your imagination run wild and make it with available ingredients. I have used some almonds, walnuts, peanuts, roasted split gram dal, raisins, cranberries, black currants, dates, oats, red poha, makhana (fox nut), cornflakes, cocoa powder, chia seeds, flax seeds, pumpkin seeds, sunflower seeds, butter, honey, maple syrup. I have used a 240 ml measuring cup.
Ingredients:
- Oats 1.5 cups
- Red poha 1.5 cups
- Makhana (fox nut) 2 cups
- Cornflakes 1/3 cup
- Chia seeds 1 tbsp
- Flax seeds 2 tbsp
- Cocoa powder 1.5 tbsp
- Dates 1 cup
- Almonds 12-15
- Peanuts 1/3 cup
- Black currants 1 tbsp
- Cranberries 3 tbsp
- Raisins 1 tbsp
- Walnuts 1 tbsp
- Pumpkin seeds 1 tbsp
- Sunflower seeds 1 tbsp
- Cinnamon powder 1 tsp (optional)
- Butter 1.5 tbsp
- Honey 3-4 tbsp
- Maple syrup 2 tbsp
Method:
- Chop the dates, almonds and walnuts into bite size pieces.
- Take a thick bottom pan and dry roast the oats for 4-5 minutes. Remove from heat and cool.
- Now add the red poha and do the same.
- Now add the makhana or fox nut and repeat.
- You can lightly roast the nuts for 2-3 minutes.
- Roast the peanuts and flaxseed too.
- Gently crush the flax seeds and peanuts.
- Crush the roasted makhana.
- Now add all the dry ingredients in a big bowl and mix well.
- Add melted butter, honey and maple syrup into it and mix thoroughly.
- Line a flat tray or a cake tin with parchment paper and spread the mixture on it.
- Preheat the oven at 150-160 degree Celsius for atleast 10 minutes and bake the mixture for 15-20 minutes or till it looks crisp.
- Remove from oven and cool for a while. Store it in airtight containers.
- Serve it to your family with love 🙂
Notes:
- You can use whatever nuts and dry fruits you have with you. No hard and fast rule.
- Maple syrup is optional. I used it because I have a fresh bottle of it given by my brother.
- Cinnamon powder is also optional.
- You can add some melted jaggery and add it before baking. Now spread it on the cake tin and press well. Now bake it and then cut it into rectangles and your Granola bars will be ready.
