Oats Cranberry White Chocolate Cookies
A slightly different variant of oats and cranberry cookies, this time with white chocolate chunks or chips. I had made it for a family get together and it was an instant hit among kids as well as adults. Very crunchy and mildly sweet with bits of chocolate and cranberry in every bite, its a perfect accompaniment with tea or coffee. Please do try it.
Ingredients:
- All purpose flour 100 gm
- Oats 50 gm
- Salt a pinch
- Baking powder a pinch
- Baking soda a pinch
- Brown sugar 1-2 tbsp
- White chocoloate chips/chunks 2-3 tbsp
- Cranberries 2-3 tbsp
- Vanilla extract 1 tsp
- Butter 75 gm
- Milk 1-2 tbsp (optional)
Method:
- Cream the butter and sugar well till its soft and creamy, using an electric beater or a whisk or by simply using your palms.
- Chop the cranberries and white chocolate slab into small pieces. Or you can jse white chocochips.
- Add vanilla extract and the dry ingredients to the butter and sugar mixture and mix well. Add the chocolate pieces and cranberry. Use 1-2 tbsp of milk if required and combine to form a dough. No need to knead the dough. Refrigerate the dough for 10-15 minutes.
- Shape the dough as desired and place them on a tray lined with parchment paper.
- Bake them in a preheated oven at 160 degree Celsius for 15-16 minutes.
- Remove from oven and allow it to rest on the tray for 3-4 minutes more.
- Cool the baked cookies on a wire rack and store them in an airtight container.
Notes:
- I have used very less sugar, since white chocolate and cranberries are both very sweet. You can increase it if you want.
- Check your oven temperature and keep an eye on the cookies after 15 minutes or so.
- The cookies will be very soft and crumbly when you take it out of the oven, it will eventually become crisp on cooling.
- For a version with whole wheat flour, refer oats cranberry cookies.
- Once cooled, don’t leave the cookies outside in the open. It will get soggy. Always store in airtight containers. It lasts for a week if stored properly.
- With the above measurements, you get about 24-25 cookies of approximately 2.5 inches in diameter.
- Few days back i tired these cookies with oats, WWF and apf. But I didn’t grind the oats and found that the cookies looked awesome and nuch more beautiful than with ground oats.
