Kesar Elaichi Shrikhand
Who doesn’t like shrikhand with pooris or to simply devour it just like that. And it gets all the more better and healthy and yummy when you make it at home without any preservatives. You just need a couple of ingredients and you are good to go. Add few spoons of mango puree or strawberry puree to make different flavoured versions of the same. Change the dry fruits added in it and enjoy various flavours. Please do try it at home. You can increase or decrease the amount of sugar as per your taste. I prefer less sweet. My recipes are just a guide line, you can make changes to suit your family’s liking 🙂
Ingredients:
- Full cream milk 1 litre
- Sugar 1/3 cup or as required
- Kesar/Saffron few strands
- Elaichi/Cardamom 3-4
- Pista 8-9
- Almonds 8-9
- Milk 1 tbsp
- Fresh cream 1-2 tbsp (optional)
Method:
- Boil the milk and allow it to cool till is mildly lukewarm.
- Add a teaspoon of curd, mix well and keep it aside for few hours till it sets well. It will take 6-8 hours approximately.
- Hang the curd in a muslin cloth till all the water is drained off. If the weather is too hot, keep the muslin cloth on a sieve and place the whole setting in the refrigerator.
- Powder the sugar along with the cardamom pods. Finely chop the almonds and pistachios.
- Soak the saffron in little warm milk and keep it aside.
- Blend the hung curd with the powdered sugar and whisk it till it is smooth and creamy without any lumps.
- Add the saffron milk and chopped nuts and mix well. If it tastes too sour, add one or two tablespoons of fresh cream. Thats the best part of home made shrikhand, you can customize it according to your taste.
- Refrigerate for 1-2 hours or more and serve it with pooris. Enjoy.
