Chow Chow Potato Sabzi

One more quick recipe for yours kids lunch box. Healthy and mildly spiced which goes well with rice or roti. Since coriander leaves are too costly these days, I have stopped buying it. But since I like to garnish all my sabzis with some greens, I have used spring onion greens.
Ingredients:
- Chow chow 1
- Potato 1
- Onion 1 medium
- Salt to taste
- Turmeric powder 1/4 powder
- Chilii powder 1/2 powder
- Oil 1-2 tsp
- Mustard seeds 1/4 tsp
- Any greens for garnishing
Method:
- Peel the chow chow and potato and cut it into small cubes. Chop the onion into fine pieces.
- Heat oil in a pan and add the mustard seeds. When they splutter, add onion and saute it till it is soft.
- Add the vegetables, salt, turmeric powder and chilli powder and mix well. Cover and cook for 10 minutes till the vegetables are soft and cooked.
- Garnish with coriander leaves or spring onion greens and serve hot with phulkas or rice.
