Coconut milk
Extracting coconut milk is no rocket science and doesn’t involve much technique either. Also, if you make it at home, it tastes much better than the store bought ones whether it’s in a tetra pack in the liquid form or packets of coconut milk powder. All you need is a good coconut which is not very dry and over matured ( look for a lighter shade coconut and not the dark brown ones ), a mixer, a mesh sieve, a small piece of muslin cloth and a pair of good strong hands.
All you have to do is to scrape the coconut, grind it in mixer with some water and squeeze out the milk.

- Coconut 1 medium
Method:
- Grate the coconut and grind it in a mixer along with some water.
- Take the ground coconut in a sieve lined with a muslin cloth and squeeze it well. What you get will be the first milk extract and will be quite thick.
- The remaining reside can be pulsed again along with some more water and squeezed again to get a thinner extract called as the second milk.
- The above step can be repeated to get a very think watery extract called as the third milk.
- The milk obtained above can be used in various gravies like vegetable and non vegetarian stew, for making payasam, in various rolls, buns and breads.
