Lettuce Cucumber Salad
A simple and healthy salad which is full of healthy veggies and crunchy almonds or peanuts and tangy with the flavour of apple cider vinegar. Use any vegetable of your choice and make variations and I am sure you will enjoy it.
Ingredients:
- Iceberg lettuce few leaves
- Cucumber 1 small
- Onion 1 small
- Tomato 1 small
- Capsicum half
- Almonds 5-6 or
- Roasted peanuts a handful
- Salt to taste
- Pepper powder to taste
- Spring onion greens 2 tbsp
- Apple cider vinegar 2 tsp
- Olive oil 2 tsp
Method:
- Wash and peel the vegetables. Cut them into long thin strips or any shape that you fancy.
- Assemble all these in a big mixing bowl and toss well.
- Mix salt, pepper, olive oil and apple cider vinegar in a bowl and mix well.
- Drizzle this over the bowl of veggies and toss gently.
- Garnish with almond slices or roasted peanuts and chopped spring onion greens.
- Serve it fresh along with your lunch and dinner or simply as a meal in itself along with a soup of your choice.
