Mango Rabri
I love any kind of milk sweet, so does my hubby. But he is very reluctant to try these sweets at home. Neha hates milk and many milk products. So, I don’t get much chance to try making sweet dishes at home. But last week, we had attended a marriage in Kota, Rajasthan and we happened to taste this mango rabri. Surprisingly Neha liked it and suggested me to make it. Bas, fir kya tha…. I didn’t need any further motivation or push. Got some full cream milk and made this for tonight’s dessert.
Hubby said this is heaven… the best dessert in the world and have told me to make it whenever any guest turn up 🙂 Neha too enjoyed a big serving. Now, will make some mango falooda tomorrow… keep glued to the blog for another exciting recipe of making falooda at home from scratch. I love to make falooda at home right from the sev to icecream.
Ingredients:
- Full cream milk 1 litre
- Mango 1 big
- Sugar 1 tbsp
- Cardamom powder 1/4 tsp
- Grated dry fruits 1 tbsp (optional)
Method:
- Boil the full cream milk in a heavy bottom wide pan. Reduce the flame and reduce the milk till it thickens well. Keep stirring and scrape the sides of the pan continuously.
- Peel the mango and keep few finely chopped pieces aside. Make a pulp of the remaining mango pieces in a mixer with a tablespoon of sugar.
- Once the rabri is ready, add the mango pulp to the rabri and mix gently.
- Add the cardamom powder and chill it for few hours.
- Serve it with the remaining mango pieces and finely chopped dry fruits sprinkled on top.
Notes:
- I have used Banganapalli mango, as it is Neha’s favourite. Alphonso mango will give it a better orangish colour.
- You can add a few drops of mango essence for an enhanced flavour. But it is optional. I prefer not to add any artificial flavourings.
- You can add more sugar in case you love your dessert very sweet. I prefer less sweet, so just added a tablespoon of sugar.
- One can increase the quantity of mango pulp according to your liking. 1 litre milk and some pulp is quite sufficient for a family.
- One can use any other fruit pulp like strawberry or cherries or use melted chocolate and make variations in the basic rabri recipe.
