Kuzhi Paniyaram
One has to really rack your brain to make tiffin items or evening snack for your kids, right? We have to ensure that it is healthy, light, not too oily, but at the same time tasty and filling too. Here is one simple dish which fits all the bill. It is super easy to make, uses very very little oil, tasty and filling too. Plus it looks really cute 🙂 Though Neha is not too fond of sweets, but she loves a weird combination of eating these spicy snack with Hersheys chocolate syrup, funny, isn’t it? You can add any veggies like grated carrots, finely chopped beans, peas, capsicum etc to make it more healthy. I made it only with some sauteed onions, green chillies and curry leaves.
Ingredients:
- Idly batter 1 cup
- Semolina 1-2 tbsp
- Salt a pinch
- Refined oil 1 tbsp
- Udad dal 1 tsp
- Onion 1 medium
- Curry leaves 2 sprigs
- Green chillies 1-2
Method:
- Take the left over idly batter and add semolina to it and mix well.
- Heat a little oil in a pan and add udad dal to it. When it splutters, add finely chopped onion, green chillies and curry leaves. Saute for a while.
- Add this to the batter and mix well. Add salt if required.
- Take an “appe” pan and heat it for a while.
- Spray little oil in each cavity and add a spoonful of mixture in each. Lower the flame to medium and cover with a lid.
- Flip the side after 3-4 minutes and cook on other side too.
- Remove from pan and serve with any dip or chutney or sauce and enjoy.
