Drumstick Leaves Stir Fry
I am sure that everyone is aware of the health benefits of drumstick leaves. It is highly rich in iron and other minerals. Here is a simple and yummy dish which can be made in 5 minutes flat. I love to eat it just like that for lunch along with some fresh salad minus any rice.
Ingredients:
- Drumstick leaves 1 cup
- Salt to taste
- Turmeric powder 1/4 tsp
- Onion 1 medium
- Garlic cloves 5-6
- Green chillies 1-2
- Curry leaves 2 sprigs
- Mustard seeds 1/2 tsp
- Oil 1 tsp
- Grated coconut 1 tbsp
Method:
- Clean the drumstick leaves and wash it well.
- Heat oil in an iron kadhai and add the mustard seeds to it. Add sliced onions, green chillies, curry leaves and garlic and saute well.
- Add the drumstick leaves, salt and turmeric powder.
- Cover and cook for 3-4 minutes. Open the lid, add the grated coconut and cook for 1-2 minutes more.
- Serve it with steamed rice and dal/curd. A healthy and yummy side dish is ready in a jiffy 🙂
