Wwf-Apf Banana Walnut Muffins
Bananas and walnuts are an excellent combination, right? What if it is made healthy too with half whole wheat flour and half apf, wouldn’t it be even more interesting? A simple no fuss recipe, perfect to finish off your over ripe bananas. If you want to make it more healthy, simply omit the sugar and perhaps you can add a tablespoon of honey or dates syrup.
Ingredients:
- All purpose flour 62 gm (1/2 cup)
- Whole wheat flour 62 gm (1/2 cup)
- Baking powder 1/4 tsp
- Baking soda 1/4 tsp
- Salt a pinch
- Cane sugar 2 tbsp
- Ripe bananas 2
- Refined oil 1/4 cup
- Vanilla extract 1 tsp
- Chopped walnuts 1/4 cup
- Milk 1-2 tbsp (optional)
Method:
- Preheat the oven at 180 degree celsius for 10 minutes or so.
- Line a cupcake mould with cupcake liners or grease it well.
- Mash the banana with a fork till it is a smooth and uniform mixture.
- Add the sugar, vanilla extract and oil to the mashed banana and combine.
- Sieve the flours, baking soda, baking powder and the salt for 7-8 months.
- Gently fold the dry ingredients into the wet ingredients. If it is too dry, add 1-2 tablespoon of milk. Add the chopped walnuts and mix.
- Pour the batter into the prepared cupcake moulds and pat it gently on the kitchen counter to remove the air bubbles.
- Bake for 20-22 minutes or till an inserted tootpick comes out clean.
- Remove from the oven and cool on a wire rack.
- Enjoy it warm along with a cup of tea or coffee.
Notes:
- You can increase the amount of sugar in case you want it more sweet.
- You can replace cane sugar with normal sugar.
- Can add some choco chips or dates pieces too to increase the sweetness.
- Cashews and almonds too can be added.
- With the above recipe I got 12 mini muffins and 6 small muffins.

Yes. You can omit if you want. See my butter cookies recipe. Doesn’t use either, but comes out well.
