Palak Potato Curry
Palak/Spinach is no doubt one of the most healthy vegetables. It is liked by everyone too. Any spinach gravy or side dish is a big welcome in my home. I make it a point to include spinach as much as I can in our food. When we get bored of palak paneer and dal palak, we often resort to potato palak. This is a simple and very mild recipe with the goodness and green colour of palak intact. It pairs well with rice as we as phulkas and rotis. Do try it and share your feed back.
Ingredients:
- Potato 2-3
- Onion 1 big
- Tomato 1
- Salt to taste
- Cumin seeds 1/2 tsp
- Turmeric powder 1/2 tsp
- Red chilli powder 1 tsp
- Spinach leaves a bunch
- Refined oil 1 tbsp
Method:
- Chop the onion, tomato finely and keep aside. Peel the potatoes and cut them into cubes.
- Clean the spinach leaves and wash it 2-3 times. Boil water in a big pan and blanch the spinach leaves for 3-4 minutes.
- Transfer the leaves into a pan filled with ice cold water and keep it aside for few minutes.
- Grind it in a mixer with 2-3 cloves of garlic till it is a fine paste.
- Heat oil in a pan and add the cumin seeds. Add the chopped onions and saute well.
- When the onion turns pink in colour, add the tomato and potato pieces.
- Add salt, turmeric and chilli powder and mix well. Cover and cook on a low flame till the potato pieces are cooked well.
- Add the palak puree and bring to a mild boil. Switch of the gas and serve warm with hot phulkas.
