Chocolate Pull Apart Loaf
Since Neha loves anything with chocolate in it, such a pull apart loaf was in my mind since long. I also had a full dabba of chocolate ganache left with me in the refrigerator. Have been thinking of ways to finish it off. I still have lots of ganache left with me… stay tuned to yet another chocolate delicacy very soon…
Ingredients:
- Whole wheat flour 125 gm
- All purpose flour 100 gm
- Salt a pinch
- Sugar 1 tsp
- Instant yeast 1/2 tsp
- Nutella 2-3 tbsp or
- Chocolate ganache 2-3 tbsp
- White choco chips 1 tbsp (optional)
- Cranberry chopped 1 tbsp (optional)
- Almonds chopped 1 tbsp (optional)
- Refined oil 2 tsp
- Lukewarm water plus milk 180-190 ml
Method:
- Mix the flour, salt, sugar, yeast and mix well until combined.
- Using the milk and lukewarm water, knead into a smooth and elastic dough. Knead for atleast 8-10 minutes.
- Keep the dough in a nicely oiled bowl and cover the bowl with a clean cling wrap or a shower cap or a kitchen towel.
- Place it in a dry and warm place till it doubles in size.
- Once the dough is doubled, gently transfer the dough from the bowl onto a clean counter and punch it to remove the gases.
- Knead for a minute or two.
- Lightly flour the counter and roll into a 12 by 14 inches rectangle.
- Apply chocolate ganache or nutella liberally on the entire rolled dough with a spatula.
- Sprinkle some chopped cranberry, choco chips and almonds on the chocolate ganache. Make horizontal and vertical cuts on the rolled dough.
- Place these pieces in a well oiled bread tin. ( I have used a 7 by 2.75 by 2.75 inches tin)
- Keep it aside for the second rise for about 25-30 minutes. Apply some milk wash on top to prevent it from drying.
- Meanwhile preheat the oven at 180 degree celsius for atleast 10-12 minutes.
- Bake for 25-30 minutes till the top looks done and golden in colour. Apply milk wash and bake for 2 more minutes.
- Remove it from the oven and apply butter on top.
- Transfer it onto a wire rack and allow it to cool for a while.
- Serve it warm with cold milk or as it is.
Notes:
- To prepare chocolate ganache, heat few tablespoon or 50 ml of fresh cream till it is just heated up. Pour it over 100 gm of chopped dark chocolate. Wait for 1-2 minutes. Mix gently til there are no lumps. Cool and use it.
- Neha said nutella choco bread tastes better than ganache coated bread.
- The bread was indeed very soft and the nuts and cranberry added to the texture. A must try for chocolate lovers.
