Potato-Paneer Bread
It is amazing to have some fresh and warm bread for morning breakfast, isn’t it? I love these simple pull apart breads which is not only easy to make but not very time consuming as big bread loaves. I was clearing my stock of idli batter and didn’t have bread with me for breakfast. Also, I didn’t want to bake a big loaf, as it is a big weekend and we are going to my in law’s place. So, the easiest choice of breakfast is a quick stuffed pull apart bread. I had some paneer and 2-3 small boiled potatoes in my fridge. So quickly thought of this simple, tasty, healthy and quick bread.
As I was busy chatting with hubby, the bread got a tad bit over browned. But no no.. it is not burnt. The photo is making it look even more brownish. But I love brown crust and believe me it is very soft and nice and not to forget that it is fully 100% whole wheat. Feels like having a simple aloo-paneer paratha 🙂
Ingredients:
- Whole wheat flour 200 gm
- Salt to taste
- Sugar 1 tsp
- Instant yeast 1/2 tsp
- Red chilli flakes 1 tsp
- Oregano 1 tsp
- Parsley 1 tsp
- Lukewarm water 150-160 ml
- Olive oil 2 tsp
- Cream cheese 1 tbsp (optional)
- Boiled potato 2-3
- Paneer cube 75 gm
- Fine semolina 1-2 tsp
- Sesame seeds 1 tsp
Method:
- Mix whole wheat flour, salt, sugar, yeast, little chilli flakes, parsley and oregano.
- Add the lukewarm water (may need more or less according to your flour) and knead into a soft and smooth dough.
- Add a little oil while kneading so that your hands do not get sticky.
- Keep the dough in an oiled bowl and cover the bowl with a cling film or a lid or a kitchen towel.
- Allow it to rise till it almost doubles. It may take 40 -50 minutes or less or more in this hot weather.
- Meanwhile make the stuffing ready. Peel the boiled potatoes, mash it along with the paneer. Add little salt, chilli flakes, oregano and parsley. Add a tablespoon of cream cheese.
- Punch out the gases and knead for a minute or two.
- Divide the dough into equal sized balls. Flatten each ball a little and fill a spoon of the filling inside.
- Close it and seal the opening and roll it on the counter or your palm. Flatten it a bit.
- Take a round cake tin and oil it well. Arrange the flattened ball in the tin.
- Repeat with all the dough and arrange it as shown below.
- Sprinkle some more herbs, chilli flakes and sesame seeds on top. Lightly dust it with fine semolina. Gently wash it with milk.
- Allow it to rise again for 20-25 minutes.
- Meanwhile preheat your oven at 180-190 degree celsius. Bake this for 20-25 minutes or till the crust is nice and golden in colour.
- Remove from the oven and apply some butter on top and cool a bit on a wire rack.
- Serve it warm with any sauce of your choice. You can change the filling as per your liking.

i am planning to make this for breakfast tom…now few doubts can i use active dry yeast if yes then quantity remains same….and should i let it bloom before using it….secondly can i make the dough today and keep in fridge after first rise…..if yes then how to use it tom morning…..
Hi Shazia, yes you can use active dry yeast. Use around 1.5 times of instant yeast.
Yes you have to activate it first with lukewarm water and sugar and keep it till it is frothy.
You can refrigerate after first rise and then tomorrow morning keep it out to thaw. Then shape it, keep for second proof and then bake.

i tried this recipe today….but i made pin wheels .i baked it at 180.taste was good, but they came out to be little hard and they were not getting brown though i brushed them with milk.i dont know where i went wrong
Do you use otg or microwave oven? Maybe you can apply milk wash or butter wash and bake for 3-4 minutes at the end at 200-220 degree celsius. Check your oven temperature

Hi pradeepa…I love and follow your recipes always…My question is regarding the colour…I always found that you have a nice colour of your final product..But this never happen with my bread…I bake in Morphy rechirds oven…Can you plZ guide me for that..Should I change the setting at the end to toast mode for better colour
