Coffee Walnut Cookies
I have always wanted to bake coffee cookies. But as I always say, people at home are not cookie fans.. so I don’t get much chance to bake them often. But when 2 days back, hubby suggested that he will take some cookies to office, I was excited and decided to try out some new cookies.. Couldn’t waste an opportunity to update my blog 🙂 So, here is a simple and healthy coffee cookies. The smell and aroma while these were getting baked was simply irresistible. Ingredients:
- Whole wheat flour 100 gm
- Maida 50 gm
- Baking soda 1/4 tsp
- Salt a pinch
- Butter 75-80 gm
- Brown sugar 1/2 cup
- White sugar 1 tbsp
- Vanilla extract 1 tsp
- Coffee powder 1 tbsp
- Cocoa powder 1 tsp
- Chopped walnuts 1/4 cup
- Chopped almonds 1/4 cup
- **Flax gel 1-2 tbsp
- Milk powder 2 tbsp
- Milk 1 tbsp
Method:
- Cream the butter and sugar very well till it is soft and creamy. Add the coffee powder and vanilla extract. Add the flax gel too.
- Mix the flours, baking soda, milk powder, salt and cocoa powder well so that everything is combined well.
- Mix the dry ingredients to the butter mixture and bring everything together. Add a tablespoon of milk if the mixture is too dry. Add the walnuts and almonds.
- Preheat the oven at 160 degree celsius for atleast 10 minutes.
- Line a baking tray with parchment paper and place the cookies on the tray. Make desired shape of your choice.
- Bake them for 18-20 minutes or more depending on your oven.
- Once they are done, remove from the oven and place them on a wire rack to cool.
- Once they are fully cooled, store them in airtight containers.
- Enjoy with a cup of hot coffee.
Notes:
- You can try making these with fully whole wheat flour.
- Milk powder is optional. I added to reduce the wheaty taste.
- If you do not have brown sugar, add normal sugar.
- At times wheat based cookies require more time for baking, check your cookies after 15-16 minutes and bake accordingly.
- Cocoa powder is also optional.
- 1 cup flour is 125 gm, 1 cup butter is around 226 gm.
- **Flax gel: Take 1 tablespoon flax seeds and grind them into a coarse powder. Add around 4 tablespoon hot water into it and stir well. Keep it aside for 6-7 minutes. They will turn into a slimy and gel like solution. Strain it using a soft muslin cloth. This clear gel will resemble an egg white. Use it as an egg replacement.

Hi .can I use yellow butter instead of white butter.I am about to bake cookies but saw I have run out of white butter.Pls reply mam
