Pull Apart Pav Bhaji
By now most of you would have realised that I am a big fan of pull aparts. I love to experiment with various kinds of pull apart and Neha and hubby too share my love for these. So all the more reason for me to try many versions of these. It serves as a nice meal itself. Just be creative, use your imagination and create such and many more beauties in your kitchen. This time the stuffing was a dry version of the famous pav bhaji. I made the same bhaji ( made it quite dry ) and used it to stuff the bread and made these to gift to a friend and for my family too.
Ingredients:
For the dough:
- Whole wheat flour 150 gm
- Semolina 50 gm
- Maida 50 gm
- Salt to taste
- Sugar 1 tsp
- Instant yeast 1/2 tsp heaped
- Milk plus lukewarm water around 1 cup minus 1-2 tbsp
- Oil/butter 1 tbsp
For the filling:
- Onion 1
- Boiled potatoes 3
- Boiled peas 1/2 cup
- Boiled cauliflower 1/4 cup
- Salt to taste
- Red chilli powder 1-2 tsp
- Pav bhaji masala 2 tsp
- Tomatoes 2 small
- Capsicum 1/2
- Refined oil 1 tbsp
- Coriander leaves 3-4 sprigs
- Sesame seeds 1 tsp
Method:
To make the filling:
- Heat oil in a kadhai and saute the onions till they are pink in colour.
- Add the cooked vegetables, tomatoes, salt, red chilli powder, pav bhaji masala and mix well.
- Add finely chopped capsicum and garnish with coriander leaves.
- Make sure the mixture is dry and there are no bug chunks of any vegetables.
To make the dough:
- Mix all the dry ingredients and knead well using the milk and water for around 8-10 minutes, till the dough is soft and elastic.
- Place the dough in a well oiled bowl and cover the bowl with a cling film or a clean kitchen towel. Keep the bowl in a warm and dry place and allow the dough to rise for an hour or till it doubles in volume.
- Punch out the gases and knead for a minute or two.
(I) For the small flower bread:
- Take around 140 gm of the dough and divide it into 7 pieces, roll each into a small disc of say 3 inch diameter.
- Fill it with the filling and fold like D and pinch the 2 edges. Repeat for 5 more pieces.
- For the 7 th piece stuff it and roll like a bun. Arrange these in a well oiled pan.
- Allow it to rise for 30 minutes.
- Apply milk wash n sprinkle some sesame seeds on top.
- Bake at 180 degree celsius in a pre heated oven for 25-30 minutes. Sprinkle some coriander leaves and milk wash again n bake for 2 more minutes.
- Remove from oven and apply butter on top.
- Cool on wire rack n serve warm.
(II) For the pull apart rolls:
- Take 150 gm dough and roll into a big rectangle.
- Apply the filling evenly and roll like a log.
- Dust the counter and elongate the roll.
- Cut into 1 inch pieces and arrange in a well oiled cake tin.
- Repeat the same procedure as with the earlier dough.
(III) For the pull apart loaves:
- Take remaining dough (~270 gm ) and repeat procedure as in (II).
- Arrange the cut out rolls in a bread tin and bake like a bread loaf.
- Serve warm with a sauce of your choice.
