Palak Rice
We had done quite some vegetable gardening in our balcony few years back, but couldn’t continue for long. Now we have again started it few weeks back and we have some spinach and herbs. Due to some reasons, the spinach were collapsing and we couldn’t leave it to grow more. So, took the harvest today and made this 5 minutes recipe of a very very simple and healthy baby palak rice with just few ingredients. An ideal way to finish off your left over rice.
Ingredients:
- Cooked basmati rice 1 cup
- Palak leaves 1 small bunch
- Onion 1
- Green chillies 2-3
- Salt to taste
- Refined oil 1 tbsp
- Garlic cloves 1-2
Method:
- Finely slice the onions, garlic and green chillies. Wash and clean the spinach leaves and chop them finely.
- Heat oil in a heavy pan and saute the onions, garlic and green chillies till they are soft.
- Add the spinach leaves, salt and mix well. Stir fry and cook for 3-4 minutes.
- Add the cooked rice and toss gently till everything mixes well.
- Serve hot with cold raita or pack it in your kids lunch box.
