Pizza Cups
A very easy to handle and serve kind of snack ideal for your kid’s birthday party. A soft and fluffy cup filled with pizza sauce and lot of veggies and topped with loads of cheese and baked to perfection is an ideal variation of the normal pizza. And if it is free of maida, then all the more reason to bake frequently, right?
Ingredients:
For the cups:
- Whole wheat flour 150 gm
- Semolina/chirotti rava 50 gm
- Salt to taste
- Sugar 1 tsp
- Instant yeast little less than 1/2 tsp
- Milk plus lukewarm water 160 ml
- Olive oil 1 tbsp
For the filling:
- Onion 1
- Capsicum 1 small
- Olives 5-6
- Salt to taste
- Oregano as required
- Chilly flakes as required
- Grated mozzarella cheese 3-4 tbsp
- Pizza sauce 2 tbsp
- Boiled corn 2 tbsp (optional)
- Paneer cubes 2 tbsp (optional)
- Olive oil 1 tsp
Method:
To make the filling:
- Finely chop onion and capsicum. Heat oil in a pan and saute the veggies. Add salt and sprinkle with chilly flakes and oregano. Cool this mixture and keep it aside.
To make the dough for the cups:
- Mix all the dry ingredients together.
- Add the lukewarm milk-water mixture and knead into a soft and elastic dough for atleast 8-10 minutes. Keep sprinkling little oil while kneading.
- Place the dough in a well oiled bowl and cover the bowl with a cling film.
- Allow the dough to rise for an hour or till it doubles in volume.
- Gently punch the dough and remove the air bubbles. Knead again for a minute or two.
- Divide the dough into 12 equal sized balls. Roll each one of them into a small disc of around 3-3.5 inches diameter.
- Lightly oil your cupcake moulds and press these discs into the mould firmly.
- Fill the sides and bottom of the cups with little pizza sauce and spread a teaspoon of the filling into it.
- Sprinkle generous amount of grated cheese on the filling and allow it to proof for another 20 minutes or so.
- Bake these in a preheated oven for around 25-30 minutes or till the cheese melts and the top is nicely golden in colour.
- Remove from oven and brush the outside of the cups with little butter. Cool them for 5 minutes on a wire rack and serve it warm with tomato sauce.
