Karachi Biscuits
Karachi Biscuits at home… Is that even possible? This was my first thought when I read about it long time back. When I tried it for the first time, I was pleasantly surprised and excited to see that we can make it easily at home. Try it and see…
Ingredients:
- All purpose flour 100 gm
- Custard powder/Cornflour 2 tbsp
- Salt a pinch
- Sugar 1/4 cup plus 1 tbsp
- Butter 60-70 gm
- Baking powder 1/4 tsp
- Tooti frooti 1/4 cup
- Chopped dry fruits 1 tbsp
- Pine apple essence 1/2 tsp
- Milk 1 tbsp (if required)
Method:
- Powder the sugar in a mixer till it is fine.
- Cream the soft butter and sugar till light and fluffy. Add the essence and mix well.
- Sieve the maida, custard powder, salt and baking powder 1-2 times.
- Add the dry ingredients to the butter-sugar mixture and knead gently.
- Add the tooti frooti and dry fruits and mix so that everything comes together. Add a tablespoon of milk if you feel the dough is too dry.
- Roll the dough into a log and wrap in a cling film and refrigerate of for atleast half an hour to one hour.
- Preheat your oven at 180 degree celsius for atleast 10 minutes.
- Take it out from the refrigerator and slice it into even pieces of approximately one fourth inch thickness.
- Place it on a baking tray lined with parchment paper and bake for 15-16 minutes or till the ends start turning a bit golden.
- As always remove from oven and let it remain in the tray for 3-4 minutes. Gently transfer them on to a wire rack. It will be very delicate, so handle with utmost care.
- Cool on a wire rack and store it in air tight containers.
- Enjoy it with a cup of warm/cold milk 🙂
Notes:
- Pineapple essence can be replaced with rose essence or pista essence.
- In case you don’t have custard powder, you can replace it with the same quantity of cornflour and add 1-2 drops of yellow colour.
- Try to slice the cookies evenly and of the same thickness. This will help in uniform baking.
- Use all ingredients at room temperature. Sugar quantity can be adjusted as per your taste.
- If you don’t like tooti-frooti, you can use raisins, cranberries, blueberries, blackberries, red cherries etc or some dried and candied fruits like guava, apple, pear etc.
- It will be quite soft when you take it out of the oven, but will harden up as it cools and become crunchy.
I don’t have a weighing scale but I really wanna make these today for my parents since they are travelling… Can u give the measurements in tablespoons though I have measuring cups too
A 240 ml cup holds around 125 gm maida, 200 gm sugar and 226 gm butter. Check your cup size and decide accordingly. Baking requires a bit precision. So please be careful.

Last week just to give a try I baked karachi biscuits a small quantity using 100 grams flour only. I was very happy as the end product was awesome. Very tasty biscuits.
all wiped off within one day.
Second time I tried with 400 grams flour( step y step followed your instructions only) as I wanted to distribute to our extended family.
Taste was good, but a little bit hard. Is it because of kneading the dough?

If the biscuits are placed in parchment paper while baking, they won’t stick to parchment paper while removing to cool it ?
Is it necessary to grease the parchment paper ? Kindly advice. Sometimes while removing, the biscuits come with the parchment paper.
No need to grease the parchment paper. I have never experienced cookies sticking to the parchment paper. Use oddywraps from Amazon. Good quality ones they are.

Use salted butter and skip the salt in the recipe. Please do not use margarine. It’s not good for health

Thanks. 1 cup flour is 125 gm, 1 cup sugar is 200 gm, 1 cup butter is around 226 gm. Please buy a weighing scale. Weight measurements are always more accurate. My cup size is 240 ml water.
After taking out from fridge slice nd bake it at 180 °for 15-16 mins na .
