Whole Wheat Crackers
I had seen some videos on you tube about how to bake crackers. Since then, had been itching to try it out in my kitchen. Every time I see such healthy savoury bakes, I think of making it for my father in law. But then it was somehow not materializing. We were planning to go to my in laws place today once Neha is back from school after her exams. I rushed to my kitchen, arranged the needed ingredients on the counter and started making these healthy whole wheat crackers for my father in law. Its packed with the goodness of oats and maize flour, spices and lots of love. Its very crispy. Wish I could let you guys hear the crackling sound while eating these. Reminds me of Monaco biscuits which we used to enjoy in our childhood. Size wise too its similar to Monaco biscuits.
Ingredients:
- Whole wheat flour 100 gm
- Oats 50 gm
- Jowar/Maize flour 25 gm
- Baking powder 1/2 tsp
- Sesame seeds 1 tsp
- Ajwain/carom seeds 1/2 tsp
- Salt as required
- Cane sugar 2 tsp
- Butter 2 tsp
- Cheese 1 tbsp (optional)
- Olive oil 1 tbsp
- Chilly flakes 1 tsp
- Coriander leaves chopped 1 tbsp
- Water as required
Method:
- Coarsely grind the oats and mix it with whole wheat flour and maize flour.
- Add salt, sugar, baking powder, chilly flakes, sesame, ajwain, coriander leaves and combine well.
- Add the cold butter and grated cheese into the dry ingredients and rub it well to get a sand like consistency.
- Slowly add water and knead into a dough for 2 minutes.
- Preheat your oven at 180 degree celsius for 10 minutes.
- Make small balls from the dough and roll it into a very thin roti.
- Cut it into rounds or squares or any fancy shape using a cookie cutter or a knife or a small lid.
- Poke small holes on the crackers with a fork, so that it gets uniformly baked and doesn’t puff up while baking.
- Place these on a baking tray which is lined with parchment paper.
- Bake at 180 degree celsius for 10-12 minutes. Remove from oven and allow them to cool well on a wire rack.
- Store in air tight containers. Healthy and crispy crackers are ready. Enjoy these with any dip of your choice or salsa or munch it just like that with your evening tea.
Notes:
- Reduce ajwain seeds or omit it if needed if you do not like the flavor/taste of it. Gives a slight bitter taste to the crackers.
- Choice of various flours in the crackers is your personal preference. Just play around with different millets and try it out. Post your experience and I would be really happy to hear from you.
- Dried methi/fenugreek leaves, curry leaves, drumstick leaves can be added to the dough for enhanced flavors and health benefits.
- Try to make it gluten free by completely avoiding whole wheat flour and usimg chickpea flour, rice flour etc.
