Spicy Vegetable Bread
After making maida and whole wheat plain breads, I wanted to try some kind of spicy loaf bread filled with lots of vegetables. Its a very flavourful bread and perfect for a cheese toast or can be eaten with just a dash of butter. Eat it fresh to enjoy the real flavours.
Ingredients:
- Maida 75 gm
- Whole wheat flour 175 gm
- Salt as reqd
- Sugar 1 tbsp
- Milk powder 1.5 tbsp
- Instant yeast 1/2 tsp
- Olive oil 1-2 tbsp
- Milk plus little water 1 cup minus few tbsp or as reqd
For the Masala:
- 1 Onion cut into small pieces
- 1 small capsicum cut into small pieces
- Garlic 1-2 cloves
- Chilli flakes as per your taste
- Salt as required.
- Olive oil 1 tbsp
- Italian herbs (oregano, parseley, basil, rosemary, thyme etc)
Method:
- Saute all the vegetables in olive oil till its soft and all the water is absorbed. Add the spices and mix well. Keep this aside to cool. Make sure that the mixture is very dry.
- Add the yeast and sugar to the diluted lukewarm milk and keep aside for 10 minutes.
- Mix the flour, milk powder and salt. Add it to the yeast solution and stir.
- Add the oil and knead into a soft dough for 12-13 min. Keep aside in an oiled bowl for almost an hour for the dough to rise. Cover the bowl with a cling wrap.
- Gently punch the dough to remove air bubbles. Knead it lightly for a minute or so.
- Add the sauteed masala to the dough and roll into a tight log and place it in an oiled bread tin (I used 7 x 3 x 3 tin) for 30-40 minutes.
- Bake in a preheated oven at 190-200 degree celsius for 30-35 minutes. ( Depending on your oven) I prefer to bake without the foil for the first 20 minutes and in case you feel it’s browning too much, cover with an aluminum foil and bake for 10 minutes or so.
- Take the tin out and apply milk wash on top and bake for 4-5 minutes till you get a nice golden colour on the crust. Remove from oven, apply butter liberally over the crust and allow it to cool.
- Slice it after 2-3 hours and enjoy it as it is with a light smear of butter or toast it with little cheese or garlic butter.
Notes:
- Consume this bread on the same day of baking. It loses its freshness soon due to the moisture present in the vegetables.
- The Italian herbs can be replaced with any spices of your choice. You can add green chillies, chat masala or any other seasonings.
- You can use any vegetables of your choice. Can add spring onions, carrot etc.

Weight measurements are always accurate. I use a 240 ml cup. I cup will hold around 125-130 GM’s flour
