I made this bread and it was way I want by God’s grace.
I reduced ingredients to half now twist is.. I made two slap and fold knead (Bertinet help me to learn)with 1.5 hr gap. As I felt dough may be over proof. I am not fond of baking or anything not even beginner just wanna eat good loves of bread. I experimented 6 times each time learning. Last time I made with reinharts recipe for WW as I am only gonna start baking bread with WW. It was fine but still something missingsearch agàin and found your blog and this recipe tried. I kept for fermentation in fridge not out of choice but Iwas tired and not in mood after 2 knead to wait anymore and bake and wait. It was my time to sleep anyway. Next day bread pass poke test Voila… first time it dint so I have to deflate and knead again.
Again folded and kept loaf in tin for 30min by getting ready then baked in my air fryer yes air fryer at 160 35nmin

I dint got shiny golden crust that’s only thing. I baked again for 5 min with bit milk and butter but okay any ways. Will try spraying next time. Sugar and salt is at right quantity I feel too much would have spoiled taste.
Puffed up,even air pockets ,baked at bottom. I have baking tin with lid. So Ibused that.
Please suggest for getting thàt golden crust bottom was crusty not top even darker in color like top crust and top is pale. I have air fryer and gonna use that so all my experiments is with my Miss Fryer

A question- As I have doubled my recipe,is it possible to make stuffed buns with the other half?

    • Pradeepa Nair says:

Yes of course you can. Bread dough is very versatile. If you want u can check my posts on various buns with different ratios of flour.

Followed the recipe to the t. Also activated the yeast before adding it to the mixture. But it didn’t rise at all. And was a dry lump :/ don’t know where I went wrong , but definitely would not be trying it again

If I use active dry yeast, I would need to activate it till it becomes frothy. Should I double the quantity of active dry yeast Pradeepa?

    Thanks
