Minestrone Soup


Ingredients:
- Onion 1
- Tomatoes 2
- Carrots 2 small
- Bottle gourd/Zucchini a small piece
- Garlic 2 cloves
- Black pepper as reqd
- Salt to taste
- Cheese 1 tsp (optional)
- Olive oil 1 tbsp
- Butter 1 tsp
- Chopped coriander/basil/parsely leaves 1 tbsp
Method:
- Chop the onions, carrots, tomatoes, bottle gourd and garlic.
- Heat oil and butter in a sauce pan and saute the vegetables minus the tomatoes.
- Add salt and water and cook for 10 minutes. Add the tomatoes and cook.
- Garnish with crushed pepper, cheese and fresh basil/parsley or coriander leaves.
- Serve hot with fresh and warm home made breads or with crisp garlic sticks 🙂
Notes:
- You can add some cooked beans and cooked pasta/macaroni too to the soup to make it an ideal one pot meal.
