Dry Fruit Laddoos
As I always say, hubby is not a fan of anything sweet. But at times, he really surprise me and shows a sudden liking for something sweet. Once my brother in law bought some dry fruit laddoos for us during one of his visit to Chennai. I hesitantly offered it to hubby expecting him to refuse it point blank. But he immediately took one and finished it in a second and infact asked for another one. I just couldn’t believe what I saw and decided to surely try it out myself.
So, as soon as those laddoos got over, I gathered up the required ingredients from my kitchen and set to work. I was quite satisfied with what I made and it tasted quite good too. But not very easy to satisfy hubby dear 🙂 He maintained that though mine tasted good, but it is different. Maybe in my obsession to make it healthy, I might have gone a bit overboard and added too many ingredients. Anyways… doesn’t matter, this is a super easy and healthy bite which can be made in 5-10 minutes. Please do try it and post your feedback.
Ingredients:
- Dates 10-12
- Badam 20
- Peanuts 100 gm
- Grated dry coconut 1/2 cup
- Chia seeds 1 tsp
- Flax seeds 1 tbsp (optional)
Method:
- Remove seeds from the dates and chop them roughly.
- Roast the peanuts and remove the skin.
- Slice the badam and keep aside.
- Roast the flax seeds and grind them coarsely.
- Combine all the ingredients and mix well. Shape them into laddoos and roll them in grated dry coconut.
- Your healthy and yummy laddoos are ready in 5 minutes.
- Store them in air tight containers.
Notes:
- The choice of dry fruits is purely your choice. You can add or vary according to your choice or availability.
- No need to add any sweetener. The sweetness of dates is sufficient.
- I usually make these dates laddoos for my little niece. For small kids and toddlers, pulse all the ingredients minus chia seeds and flax seeds in a mixer and then make small balls out of it. My niece enjoys this during travel, shopping and in her snack box.
