Choco cupcakes
Neha loves anything with chocolate in it. I don’t bake much cakes because hubby doesn’t like it at all, my daughter Neha is choosy and I shouldn’t be eating too many cakes at this age, right? So, the best option is not to bake cakes. But after seeing lots of yummy cakes and cupcakes in the facebook baking group that I am part of, it is difficult to refrain myself from trying out some of those. The safest and easiest bet is to go for something with chocolate in it. I keep waiting for an opportunity where I can bake some kind of cake and gift it to others. But my Neha likes to maintain a low profile and is not very comfortable of flaunting my cakes in front of her friends. Then one day, she and her building friends decided to have a small girls’ party in the terrace of our apartment. I jumped at the opportunity and told her that I shall bake cupcakes. She too seemed to be a bit ok with the idea. The below recipe is the result of one such attempt. I doubled the recipe and made 2 dozen cupcakes. It was a simple choco chip cupcakes without any frosting. Her friends loved it and some of my friends who tried this recipe told me that it was indeed a good one. Happy me…
Ingredients:
- Maida 160 gm
- Cocoa powder 15 gm
- Instant coffee powder 1 tsp
- Sugar 100 gm
- Baking soda 1/2 tsp
- Salt a pinch
- Vanilla extract 1 tsp
- Butter milk 1 cup (240 ml)
- Melted butter plus veg oil 1/4 cup
- White/dark choco chips a handful (optional)
Method:
- Preheat the oven at 180 degree celsius for a minimum of 10 minutes.
- Sieve maida, cocoa powder, coffee powder, salt and baking soda atleast 3-4 times.
- Mix buttermilk, powdered sugar, oil-butter mixture and vanilla extract till the sugar gets completely dissolved in it. You can use a hand whisk or an electric beater.
- Slowly add the dry ingredients and mix well. Use a wooden spoon or spatula and gently fold the mixture.
- Take a cupcake mould and line it wiht liners. Lightly smear the liner with oil or butter so that you can unmould the cupcakes easily.
- Pour into moulds and sprinkle choco chips on top.
- Bake in a preheated oven at 180 degree celsius for 20-22 minutes. Check with a toothpick for doneness. Insert a tooth pick in the centre of the cupcake. If it comes out clean, you cake is ready. Or else bake it for 2-3 minutes more.
- Take it out of the oven and cool it nicely on a wire rack.
- Store it in containers after it is fully cooled.
