Pull Apart Pizza Rolls
Ingredients:
- Whole wheat flour 125 gm
- Chirotti rava 50 gm
- Maida 25 gm
- Instant yeast 1/2 tsp
- Sugar 1 tsp
- Salt to taste
- Oil or butter 1 tbsp
- Milk plus warm water (50:50) 1 cup minus 2 tbsp
For the filling:
- Onion 1 small
- Oregano as required
- Capsicum a small piece
- Grated cheese 2 tbsp
- Chilli flakes 1 tsp
- Salt a pinch
- Pizza Sauce 2 tbsp
Method:
- Chop the onion and capsicum into very fine pieces.
- Mix maida, whole wheat flour, chirotti rava, sugar, salt and instant yeast. Add milk-water mixture to the dry ingredients and combine well.
- Add oil and knead into a smooth and soft elastic dough for 10-12 minutes. Allow it to rise in an oiled bowl covered with cling film for an hour, or till it doubles in volume.
- Gently punch the dough and knead for 1-2 minutes on a floured surface.
- Roll it into a rectangle using a rolling pin into approximately 12 by 10 inches.
- Spread the pizza sauce evenly on the rolled dough. Sprinkle the veggies, oregano, chilli flakes and salt. Add some grated cheese on top.
- Gently roll into a log and slowly elongate the roll a bit by rolling it again on the floured counter.
- Cut the stuffed roll into pieces of approximately 2 inches length, using a sharp knife or a scrapper.
- Arrange these pieces in an oiled pan. Apply milk wash on the top to prevent it from drying. Cover it with a big lid and allow it to proof again for 25-30 minutes till it puffs up.
- Preheat the oven for 10 minutes at 180 degree celsius.
- Bake the rolls for 20-25 minutes. Now sprinkle the remaining cheese on top and increase the temp to 200-220 degree celsius and bake for another 3-4 minutes till the crust is golden and the cheese melts.
- Remove from oven and allow it to cool on a wire rack. Serve it with tomato sauce.

I do not have weighing scale at the moment and with the lockdown, cannot even buy one.
Also, how many rolls does this recipe yeild?

Number of rolls will depend upon the size you make. A 240 ml cup holds around 125-130 grams flour

Yes you can. Can store for 2-3 days. Store in an airtight container in the refrigerator.
can we use dry yeast instead of instant? what will be the proportion please?
Yes u can. Around 1.5 times of instant yeast
Can i use 50g more maida or wheat instead of chorotti rava.
Yes you can. You can use normal unroasted semolina. If you want you can grind it a bit in the mixer.
