Log Bread
The best thing after joining the baking group on facebook is that we have got more variety in our food menu. So, how about making some quick bread along with a healthy soup and hasselback potatoes for dinner? Interesting right? The bread is a quick rise spicy one with wwf and fine semolina/chirotti rava.
Ingredients:
- Whole wheat flour 150 gm
- Chirotti rava 50 gm
- Salt as required
- Sugar 1 tsp
- Instant yeast 1/2 tsp
- Milk powder 1 tbsp
- Lukewarm water plus milk 1/2 cup plus 2-3 tbsp
- Coriander leaves finely chopped 2 tbsp
- Chilli flakes 1 tsp
- Garlic finely chopped 1 tsp
- Parsley leaves 2 -3 tsp
- Olive oil 1 tbsp
Method:
- Mix all the dry ingredients and knead into smooth and soft dough using the lukewarm milk and water mixture and oil.
- Keep it in a well oiled bowl and cover it with a cling film. Keep it aside for 15 minutes. ( you can keep till it doubles… I was running short of time)
- Punch the air by gently knocking the dough and knead for a minute or so.
- Add the crushed garlic, chilli flakes and coriander leaves and roll into a tight log.
- Make a long loaf and keep it on a tray lined with parchment paper.
- Apply milk wash and sprinkle semolina on top uniformly. Keep it covered with a soft cloth for half an hour.
- Milk wash again and sprinkle little chilli flakes and parsley leaves and bake in a preheated oven at 180 degree celsius for 20-22 minutes.
- Milk wash again and bake at 200-210 degree celsius for 3-5 minutes.
- Remove from the oven and apply butter on top. Allow it to cool on a wire rack for some time. Slice and enjoy with a dash of butter and a bowl of soup.

I hv proofed it twice. . First rise for 15 min and second rise for 25 min or so. Read again 🙂
