Curd Rice
I am sure that many of you will agree with me when I say that curd rice is surely one of the most comfort foods, specially during summers, isn’t it? It is such an easy-peasy recipe and anyone can make it at any time and you can never ever go wrong with it. Just make sure the rice is cooked well and you use nice thick curd. So, here you go…
Ingredients:
- Cooked rice 1 cup
- Thick curd 1 cup
- Milk few tbsp
- Salt to taste
- Green chillies 2-3
- Curry leaves 2 sprigs
- Ginger 1 inch piece
- Refined oil 1 tbsp
- Mustard seeds 1 tsp
- Udad dal 1 tsp
- Coriander leaves 2 sprigs (optional)
Method:
- Mash the cooked rice well and add few tablespoon of milk to it.
- Heat oil in a kadhai and add the mustard seeds to it. When they crackle, add the udad dal and fry them.
- Add the finely chopped ginger, green chillies and curry leaves.
- Whisk the cold curd till smooth and add the tempering to it.
- Add the tempered curd to the rice and mix well. Adjust salt to taste.
- Garnish with coriander leaves and serve it with pickle, potato fry and papad if necessary.
