Nankhatais

Ingredients:
- All purpose flour 100 gm
- Fine semolina/chirotti rava 2 tbsp
- Sugar 1/4 cup
- Salt a pinch
- Baking powder 1/4 tsp
- Cardamom 4-5 pods
- Ghee 1/4 cup plus 1-2 tbsp
- Chopped pista and badam 1 tbsp
Method:
- Preheat the oven at 160 degree celsius for 10 minutes.
- Remove the cardamom seeds from the pod and powder it along with the sugar.
- Mix all the dry ingredients well. Add the ghee and bring everything together.
- Do not knead hard. Just mix everything. Reduce or increase the amount of ghee.
- Shape it into balls and make a slit or any pattern on it with a knife and sprinkle the finely chopped dry fruits.
- Bake for 15-17 minutes or till the sides are golden
- Gently remove them from the oven and let it rest on the tray for 3-4 minutes.
- Carefully transfer them onto wire rack and allow it to cool completely.
- Store it in air tight containers and enjoy it.
Notes:
- You can add 3-4 tablespoon of besan to the maida and semolina.
- You can completely skip maida and use whole wheat flour instead. Refer earlier post for reference.
