Akki Roti
This was a very long pending recipe in my draft folder. Finally, when I made it again a few days ago, I managed to click few pictures. Akki roti (in Kannada, akki means rice and roti means flat bread) is a popular breakfast menu in Karnataka. It’s basically a flat bread made with rice flour, salt and water. But more than often, vegetables like grated or finely chopped carrots, onion, ginger, green chilies, coriander leaves, curry leaves, grated coconut is added to the dough to make it more interesting, healthier and flavorful.
Mostly these akki rotis are made with kneading rice flour with salt and water (and vegetables). But at times the rice flour is cooked in water till it forms a dough like consistency (similar to the ukdiche modak dough). This method yields a more softer roti. Here, I have kneaded the dough in slightly warm water. After kneading the dough well, we make small balls of the dough and roll them on oiled banana leaf or turmeric leaf. You can also use a plastic sheet or parchment paper. Another option is to use a moist towel (lint free) and pat the dough on it till you get a thin roti and then invert the towel on the heated griddle.
These rotis taste good on its own due the spices and vegetables, but they are often paired with coconut chutney or at times with mixed vegetable curry. Adding dill leaves to the dough is also a very popular version.

Ingredients:
- Rice flour 1 cup
- Salt to taste
- Turmeric powder a pinch
- Carrot 1/2
- Onion 1/2
- Green chilies 1-3
- Coriander leaves handful
- Curry leaves few
- Ginger a small piece
- Grated coconut 1-2 tbsp (optional)
- Oil as required
Method:
- Grate the carrot and finely chop the onion, green chilies, coriander leaves and ginger.
- Place the rice flour in a big mixing bowl.
- Add all the ingredients except oil and mix well.
- Sprinkle warm water slowly and knead into a soft dough. Sprinkle some oil and keep aside for 20 minutes.
- Make small lemon size balls from the dough.
- Grease a plastic sheet, parchment paper, a moist towel or banana leaf and flatten the dough with your palm or fingers till you get a thin disc of diameter 6-8 inches.
- Heat an iron skillet and cook these rotis on medium flame by drizzling oil on both sides.
- Serve it hot with a chutney of your choice.
