Potato Pancakes
This is one among the many incomplete drafts of my blog. It’s been almost two months since I have edited my drafts. The impending lockdown, fear of Corona and the uncertainties related to it weren’t a bit conducive to blogging as far as I was concerned. As most of my followers and readers would be knowing,
the lockdown started immediately after we shifted out home. I had some issues with my oven, so baking became almost nil and this coupled with shortage of commodities, veggies and grocery, cooking was for basic survival… No frills or fancies whatsoever. This made my blogging practically zero. I started concentrating more on eleventh standard Mathematics and Chemistry 🙂 Anyways…
Now I think I should atleast publish some of the half drafted posts without further delay. So, here is a simple potato pancake recipe which I am sure your kids would enjoy with a dip or tomato sauce. It can be an ideal evening snack for your little ones and not so little ones. My Neha loved it 🙂 Do try it and share your feedback.
Ingredients:
- Potatoes 2
- All purpose flour 2-3 tbsp
- Corn flour 1 tbsp
- Salt to taste
- Finely chopped onion 2 tbsp
- Crushed pepper 1 tsp
- Grated cheese 1-2 tbsp
- Chopped coriander 1-2 tbsp
- Oil/butter as required
- Water 1-2 tbsp
Method:
- Peel and grate the potatoes using a grater. Soak it in a bowl of water for 15-20 minutes.
- Wash it using a colander till the water turns clear.
- Drain the excess water and transfer it into a mixing bowl.
- Add all purpose flour, cornflour, salt, pepper, chopped onion, chopped coriander leaves and mix well.
- Now add the grated cheese and combine.
- Add water if required and make a thick batter.
- Heat an iron skillet or a non stick pan and drizzle some oil or butter.
- Pour spoonful of batter and spread into a medium thick pancake.
- Cook on medium flame for 2-3 minutes. Flip and cook the other side till it’s golden.
- Remove from skillet and repeat with the remaining batter.
- Serve it hot with tomato sauce or any dip of your choice.
Notes:
- You can replace the all purpose flour with oats flour or chickpea flour or whole wheat flour.
- Rice flour is an excellent alternative for cornflour in the above recipe.
- You can add some grated carrot in the batter.
