Potato Yeast Fermentation
Another trial in my kitchen during the Covid 19 lockdown days. Earlier, I had posted a no knead and yeast free bread. Honestly, I didn’t like it much and it resembled a cake rather than a bread. And lot of my followers and readers were constantly asking me for yeast free recipes. That’s the time when I came across this potato yeast. I had tried a raisin water bread long time back. Also, have baked around 10-12 sourdough breads by making starter
from scratch. Didn’t document it or update it in my blog as I didn’t think I had the required knowledge to blog about the same. Now I feel may be I should have done it, maybe it would have helped some. Sourdough bread starter requires more days for maturing as compared to these yeast water. You may try making yeast water with fresh fruits like apples, grapes, oranges etc or even with dried fruits like plums, peaches, raisins and so on.
I shall update the results of using this yeast water, though not very successful. But I am sure some of you would be inspired to carry this forward and bake a better one. I am trying all this since many of you don’t have a stock of yeast or do not consume it for various reasons, but are still in the lookout of a bread recipe. As I wrote in the Facebook group, my oven is not yet functional and hence I have quite a many limitations in baking stuffs. Anyways .. the interested ones can try making this potato yeast today. All it would take is one potato and few minutes. Good luck :).
Ingredients:
- Potato 1
- Water 2 cups
- Sugar 1 tsp
Method:
- Peel the potato and wash it. Cut it into 4 big chunks.
- Transfer it into a sauce pan and cook it for around 30-40 minutes till it’s soft, fully cooked and mushy.

Potato Diced for Yeast Preparation
- Drain the water and pour it into a clean and sterilized glass jar.
- Mash the potato pieces well and add it to the drained water.

Mashed Potatoes
- Add a teaspoon of sugar and stir completely.
- Cover with a lid or a muslin cloth and keep it in a dry warm place for almost a day.
- You will notice some bubbles after 12-14 hours or so.

Mashed Potatoes After Days of Fermentation
- It will smell sweet and yeasty, similar to Kerala aappam or fresh toddy (if you are familiar with that smell 🙂 )
- When it’s bubbled up and frothy, it should be ready to be used. For further instructions, please stay tuned 🙂
Notes:
- You can use this potato yeast water to knead dough and bake breads or use it to make a starter. I am trying a couple of things… Will update shortly.
- It’s better to bake a flat bread like focaccia or a simple log shaped bread in a tray rather than a huge bread loaf.

Can you please confirm the size of potato to mix in 2 cup of water, I used a large size of potato but no bubbling still after 28 hours.
Hey thanks for the feedback. A medium size potato is fine enough. In hot Indian weather, it showed bubbling activity quite fast. If you are in a colder place, you might need some more time. Hope this helps.
I am 92 years old, back in 1935 my mother had a potato starter, she baked bread & a big pan of cinnamon rolls 2 times a week. She just kept the jar of starter in the cupboard. I do recall her getting very mad at me the night I dumped the potato water down the sink when she was planning to bake the next day.. Once when she thought the starter was rather flat, she went to a neighbor and got some from her. My mother never bought yeast.
