Quinoa Veg Soup
Happy to add another quinoa recipe in the blog 🙂 Everytime I try something with quinoa I am mighty surprised at the versatility of these seeds. Yes, yes quinoa is indeed a seed and not a grain. Its so very easy to adapt and use it in various forms, be it pulao or Indian Chinese style fried rice or a simple stir fry with loads of veggies. Add it with veggies to make a salad or add it to shredded chicken, it’s tastes good. Try these quinoa cutlets, I am sure you would love it. Always remember to wash
the quinoa well before cooking. The outer covering has saponin which makes it taste bitter. You can very well add it to your dosa or adai dosa batter. I think my next trial would be to try adding it in some bakes. How about some quinoa energy bars or digestive biscuits? Stay tuned 🙂
Ingredients:
- Onion 1
- Tomato 1
- Carrot 1
- French beans 6-7
- Capsicum 1
- Mushroom 5-6
- Baby corn 2-3
- Salt to taste
- Chili flakes to taste
- Oil 2 tsp
- Cooked quinoa 3-4 tbsp
Method:
- Chop all the veggies finely.
- Heat oil in a pot and saute all the vegetables till they are soft.
- Add around two cups of water and bring to a boil. Add salt to taste.
- Cover and cook for five more minutes.
- Add the cooked quinoa and simmer for few more minutes.
- Garnish with chili flakes and serve it hot 🙂
