Sprouted Beans Quinoa
Let me not go into too much introduction for this post. By now, you all might be aware of my obsession to quinoa and that I am using it regularly in my kitchen. So, here is another easy peasy and yummy way to incorporate quinoa in our diet. This is definitely a healthy dish with the goodness of not only the protein rich quinoa,
but the nutrition of sprouted beans too. I have used sprouted moth beans. You can use any pulse of your choice. This can be had as a breakfast item or a lunch. Pair it with a chilled raita or plain curd. I have used a 240 ml cup. For details on how to cook quinoa, please read my other posts on quinoa. You can buy good quality organic quinoa from Amazon.in
Ingredients:
- Cooked quinoa 1 cup
- Steamed sprouted beans 1/2 cup
- Onion 1
- Tomato 1
- Green chilies 1-2
- Garlic 2 cloves
- Ginger 1/2 inch piece
- Salt to taste
- Turmeric powder 1/4 tsp
- Red chili powder 1/2 tsp
- Coriander powder 1 tsp
- Coriander leaves for garnish
- Curry leaves few
- Mustard seeds 1/4 tsp
- Asafoetida a pinch
- Refined oil 2 tsp
Method:
- Chop the onion, ginger, garlic, green chilies and tomato finely.
- Heat oil in a pan and add mustard seeds. When they splutter, add curry leaves and asafoetida.
- Add the chopped onion, ginger-garlic, green chilies and saute them till they are translucent.
- Now add the chopped tomato, dry spice powders and salt to taste.
- Sprinkle some water, cover and cook till the tomato pieces are soft.
- To this mixture, now add the steamed sprouted beans and mix well. Cook for two minutes.
- Now add the cooked quinoa and toss gently. Let it cook for 3-4 minutes so that everything mixes well with each other.
- Garnish with finely chopped coriander leaves and serve hot with a chilled raita.
