Quinoa Veg Fried Rice
As I had mentioned in one of my earlier posts, hubby is on a fitness mission since the beginning of 2020. As a result, my kitchen gets to see lot of recipes using these super grains like quinoa, various millets, broken barley, broken corn, oats etc 🙂 When not on a diet, hubby is a real foodie and enjoys his non veg, rice, rotis, idli- dosa, appam etc. But now he doesn’t eat
rice, has rotis only once or twice in a week and no idli-dosa 🙁 This makes it necessary to bring some variation in the recipes using these super grains.
I have made a couple of recipes using quinoa and so far, it has been given a green signal too. So here is another trial using quinoa. This is an Indian Chinese kind of fried rice with loads of veggies and cooked quinoa. You may add chili sauce, soy sauce and other sauces of your choice. But I usually prefer not to add any of these unless and until it’s absolutely necessary.
I have used a 240 ml cup. Always remember to cook the vegetables on high flame, so that they remain crisp and do not turn limp and soggy. And do not overcook them. This would taste good with chili paneer or any manchurian of your choice. Ingredients:
- Cooked quinoa 1/2 cup
- Salt to taste
- Carrot 1 small
- Beans 6-7
- Bell peppers quarter of each
- Mushroom 4-5
- Boiled corn 2 tbsp
- Onion 1 small
- Garlic 1-2 cloves
- Spring onion greens 2-3 sprigs
- Green chilies 1-2
- Sesame oil 2 tsp
- Soy sauce 1 tsp (optional)
Method:
- Cook quinoa as mentioned in detail here.
- Chop the veggies into thin slices.
- Heat an iron wok and add oil to it.
- Saute the veggies on high flame for 3-4 minutes.
- Add the cooked quinoa and toss well.
- Drizzle soy sauce if desired.
- Finally, garnish with finely chopped spring onion greens and serve it hot 🙂
