Red Lentils Veggie Soup
I had some cooked red lentils with me and I was wondering what to do with it. As always, during my free time, I check recipes on Pinterest and was surprised to see many soups using these red lentils. Though I was a bit doubtful about how this would be received by folks at home, I decided to give it a try 🙂 Finally, when the soup was ready, I thought it looked like a colourful tooti-frooti soup because of the
small dices of coloured bell peppers, what do you guys say? Hubby had it without much comments, though the daughter made a face and asked me why do I have to experiment so much 🙂 Anyways …. I would leave it to you guys to decide if it was edible or not.
I have a feeling that you can add some coconut milk instead of regular milk and infact make it vegan. Or you may omit the milk and add some tomato puree to make it a bit tangy. The non vegetarians may add some chicken stock instead of vegetable stock. Overall, worth a try for those who like to try various home made soups, because after all all the ingredients in it are healthy 🙂
Ingredients:
- Cooked lentils 1/2 cup
- Salt to taste
- Onion a small one
- Carrot 1
- French beans 8-9
- Tomato 1
- Bell peppers cubed 2-3 tbsp
- Vegetable stock 2 cups
- Crushed pepper to taste
- Milk 2-3 tbsp
Method:
- Chop the onion, carrot, beans and tomato finely.
- Cook the vegetables (except the bell peppers) in the stock till they are almost done. Do not overcook them.
- Add the cooked lentils and simmer on low flame for 4-5 minutes.
- Add the chopped bell peppers and cook for a minute.
- Season it with salt, crushed pepper and finally add the milk.
- Serve it hot with a bread of your choice. A hearty n filling and protein rich soup is ready 😉
